Strawberry Freezer Jam

Serves: 7 (8oz. jars)
  • 2 cups of crushed fresh strawberries
  • Juice of half a lemon
  • 4 cups granulated sugar
  • 1 envelope of fruit pectin
  • ¾ cup water
  1. Wash and de-stem your strawberries. Quarter large strawberries.
  2. In a large bowl, crush the strawberries until you have 2 full cups of crushed strawberries.
  3. Add 4 cups of sugar and juice from ½ a lemon. Stir well and allow to sit 10 minutes.
  4. Dissolve pectin in ¾ cup of water in a small saucepan.
  5. Bring to a boil and boil one minute.
  6. Pour boiling pectin over crushed strawberries and stir well.
  7. Fill each jar ¾ with the jam. Wipe off any spills from the edges of jar and screw on the lid.
  8. Allow to sit for 24 hours then place in the freezer to store until ready for use.
